Guava is one of the most popular fruits across South Asia and Latin America, but it's still underappreciated in North American cuisine. The flavour is tropical and distinctive — somewhere between pear and strawberry, with a musky, floral undertone. Like the Aam Panna, this Guava Panna takes the fruit and builds it into a classic Indian-style refresher: guava pulp blended with black salt (which enhances fruitiness in a mysterious, savoury way), roasted cumin, fresh mint, a touch of sugar, and water. Chilled and served over ice. It's tropical, cooling, and something you're unlikely to find anywhere else in Vancouver.
