Dahi Bhalle is a dish of remarkable contrasts. "Dahi" means yogurt, "bhalle" (also called vadas) are soft dumplings made from ground urad dal (split black lentils). The bhalle are soaked in water after frying to remove excess oil and become pillowy soft, then submerged in cool, creamy, lightly sweetened whipped yogurt. Drizzled with sweet tamarind chutney and green mint chutney, then finished with roasted cumin, red chilli powder, and chaat masala. The result is simultaneously warm in spice and cool in temperature — deeply satisfying, unlike anything in Western cuisine. Think of it as a savoury, tangy, spiced yogurt starter. Once tried, rarely forgotten.
