Punjabi Style Sev Puri uses the same hollow crispy golgappa shells as Pani Puri — round, ping-pong-ball-sized, made from semolina and fried until light and crunchy. Each shell is filled with spiced boiled potato, then generously drenched with cool thick yogurt (dahi), sweet tamarind chutney, and zingy green chutney. The whole bowl is then blanketed in a golden pile of thin crispy sev (chickpea flour noodles) and finished with fine red chilli strips and fresh coriander. The yogurt makes this version creamy and cooling — a North Indian take on sev puri that balances tang, spice, and richness in every bite.
