Veg Lollipop is an Indo-Chinese invention that became a staple of Indian restaurant menus and roadside Chinese food stalls. A mixture of mashed vegetables (potato, carrot, cabbage, beans) is seasoned with soy, ginger, garlic, green chilli, and spices, shaped into balls, skewered on a stick (hence the "lollipop" name), coated in a light cornstarch batter, and deep-fried until golden and crispy. Served with a fiery red chilli dipping sauce or manchurian sauce. It's playful, flavourful, and fun to eat. Great for sharing or as a starter alongside your main.
