Falooda is unlike anything you've encountered in Western food culture — and that's exactly what makes it worth trying. Imagine a tall glass layered with distinct elements, each contributing something unique. At the bottom: sweet rose syrup (the iconic pink colour). Then sabja seeds — tiny black basil seeds that, when soaked in liquid, swell and develop a soft, slippery gel coating (similar to chia seeds, completely harmless and pleasant). Then falooda noodles — thin, translucent, gelatinous strands made from cornstarch, silky and neutral in flavour. Chilled milk is poured over, everything floats and layers beautifully, and it's crowned with a scoop of ice cream. The Royal Rabdi version adds rabdi on top — a thick, slow-reduced sweetened milk with cardamom and nuts, deeply fragrant and intensely creamy. You eat it with a long spoon AND a straw, mixing the layers as you go. It is simultaneously a drink, a dessert, and an experience.
